“VALLIGIANO” Cooked ham “Scelto” Prague-style

Smoked cooked hams

We use only the best pork legs, carefully selected. We season them with our natural infusion prepared with a mixture of spices and aromatic plants. After the massaging and maturing phase, during which the legs acquire our typical taste and softness, they are shaped into the traditional round shape by the skilled hands of our pork butchers. The legs are then subjected to a first phase of steaming, to maintain fragrance and organoleptic qualities. The second phase of cooking is instead dedicated to smoking with special natural-only wood essences composed mainly of natural dried beech chips and juniper berries.

The outer color is slightly amber, the result of the final smoking. The inside, on the other hand, is pinkish, soft and with a compact slice, capable of melting in the mouth like a true Quality ham. To the palate, the ham is sweet and delicately smoked.


Selected pork legs, Vida infusion of natural spices and aromatic plants, moulding without the mould by hand, slow steaming for over 20 hours, smoking with precious wood essences and a lot of passion in making cold cuts since 1966.

Our cooked ham "VALLIGIANO" is a quality ham: therefore with low content of preservatives and antioxidants. Therefore, once opened it should be cut and consumed as quickly as possible taking care to store it at a temperature between 0 ° and 4 °. It can also be vacuum-packed or placed in atm, extending its natural shelf-life by a few days.

Degustazione e abbinamento

In order to release the typical aromas of the cooking process, "VALLIGIANO" ham should be eaten cold and cut thinly with a slicer. We recommend pairing it with rosé wines or red wines such as Merlot or Cabernet Sauvignon, which better enhance its flavors.
